Much like Cows, Sheep have been vital to our way of life for a long time. In Red Dead Online they are just useful for the challenges.
Sheep can be found in several locations and are located on ranches and in some of the towns. One town has flocks of Sheep ready to be skinned for the Daily Challenge. Completing this challenge will need to be done carefully.
The town with plenty of Sheep to sheer is the town of Valentine as there are several sheep-pens. They are in the center part of town, so it should not be too difficult to find.
Here is where being careful will pay off. Since these Sheep are in the center of Valentine it will be difficult to do it without being seen. Killing and skinning will be best done at night as most of the population of Valentine will be fast asleep.
The best weapon to use is the knife. This will kill the Sheep without making too much noise and reduce your chance of begin caught. Sheep are classified as domestic animals, so you will lose some honor when you do this.
